Ok, so I’m having some technical difficulties setting up the linky party I promised last week. Apparently WordPress and McLinky are not friends in the coding world. I’m trying to work out the kinks but you’ll have to be patient with me (since I refuse to spend my Friday night troubleshooting the blog). In the meantime, if you have a Friday Find to share just add a brief description and the URL to the comments area.

Now, on to this week’s find…I’m heading to a movie tonight so I thought I’d share a few of my favorite weekend snacks. Have you guys tried these yet?

Archer Farms Honey Cinnamon Almonds
If you’re a fan of the cinnamon pecans I posted about last winter then you’ll love these almonds. I found them at Target a few months ago and I’m hooked. I’m not a huge nut person but I love munching on these.

Pretzel m&m’s
Salty pretzel balls smothered in yummy milk chocolate, coated in a thin candy shell…need I say more? In my book they’re the perfect grab ‘n go snack. I must not be the only fan because every time I try to find them in the checkout area they’re sold out. If you’re heading out to the movies tonight too, you should definitely add these to your ‘sneak into the movies’ stash. Have a great weekend, guys.

Don’t you just love the beginning of summer? Almost overnight the stores are suddenly stocked with red-check tablecloths, freezer pops, hot dogs and boatloads of these…

I just can’t help myself. We don’t even have a fire pit but somehow I couldn’t stop my hands from adding these scrumptious s’more supplies to my cart last week. Of course, once I got home I had to think of a way to use them. I thought to myself, hmm…rice krispies are good with marshmallows, graham crackers are good with marshmallows, and everything’s good with chocolate…maybe I could mix it all together. Luckily I had a box of generic rice krispies in my pantry so this impromptu rice krispie concoction was easy to create. The end result looked something like this…

I’ve always been a rice krispie treat fan, but this variation was down-right delicious. I’m sorry I don’t have pictures of the process but I was just throwing things in as I went so I didn’t have time to measure or grab a camera. Honestly, it’s so simple you don’t really need a tutorial. Here’s the basic idea (keep in mind I’m estimating the quantities I used so feel free to adapt the amounts to your liking).

Ingredients

3 tbsp butter

1 regular bag of large marshmallows

5 cups of rice krispie cereal

1 1/4 cup roughly smashed graham crackers

1 Hershey bar coarsely broken into pieces

Directions

Roughly smash your graham crackers in a large ziploc bag (my kids used a rolling pin). The goal here is to get small chunks (about the size of a dime or less), not just crumbs.

Break up your Hershey bar while it’s in the wrapper. Again, you’re going for small chunks.

Melt your butter in a large saucepan on low heat. Add marshmallows and stir until melted. Remove from heat.

Add rice krispies and graham cracker chunks and stir until evenly coated.

Add chocolate pieces and stir (the chocolate will melt into the mixture)

Press the mixture into a 13″x9″ baking pan coated with cooking spray and allow to cool.

My family devoured these…literally. We didn’t even wait for them to cool – we just dug right in to the chocolately, gooey goodness. If you’re looking for a sure-fire way to usher in summer (without actually building a fire) you should definitely give this recipe a try. Just thought I’d pass it on.

Speaking of Halloween, if you’re in the market for a sweet treat to send in for your kid’s Halloween party next week, you might want to check out this cool site. I first came across Bakerella a few months ago when I was following links from a ‘photography tips’ site.

I was quickly won over by her adorable collection of cupcake pops. Not only are they clever and fun, but they’re made from a cake mix – which is right up my ‘quick and easy’ alley. I tagged the site but sort of forgot about it until yesterday when I was searching for fun food ideas for elementary school parties. When I caught a glimpse of her awesomely bad Halloween pops, I knew I’d found what I was looking for.

They’re the perfect sweet treat for elementary-age kids…easy to handle, colorful, and a huge step up from the boring orange cupcakes you can pick up at the grocery store. I was able to buy all the supplies I needed to make a big batch at WalMart for under $8. I haven’t put them together yet, but thanks to Bakerella’s detailed instructions, I’m hopeful that I can pull them off.

If you’re on the list to send in treats next week, you might want to give these little charmers a try. Just thought I’d pass it on.
